We are a 100% vegan and gluten-free bakery, founded by Ellen Edwards. We provide the people of Brighton and beyond with exquisite baked goods that don’t come at a cost to the animals, the planet, or your body.
We are increasingly choosing to live Vegan or Plant Based lifestyles across the UK, and many people are opting for Gluten-Free options, whether they live with coeliac disease, a gluten intolerance, or simply for health.
Our Ethos
Our ethos at Solstice is to spread joy through our bakes. We tread lightly on the Earth whilst refusing to compromise indulgence and flavour. Every choice we make has an impact on the lives around us, and we will always choose compassion – for the planet and all life on it.
Our Founder
Ellen is an artist and maker, with a lifelong passion for baking, and the arts and crafts. They have been a vegan since 2016 and are always eager to share the incredible world of animal-free baking.
They also have a vibrant creative practice and with an MA in Design, are the founder of The Sol Projects, a creative and collaborative mission aiming to bring together the worlds of crafts and climate activism.
